When I was a girl..... a very very long time ago.....on the Prarie.....we grew our own beets, among other edible things, and my grandmother made Harvard Beets........which are very similar to your pickled beets......and I've never ever liked them and dreaded Harvard Beet night. I'm so sorry to tell you this, because your description of all the varied beets with their amazing colors sound like a delight and yet ........ for me....... not for a minute .....for all these years not once have I wanted to taste them again.......I know what they taste like.....but I'm sure yours are a fabulous taste treat and everyone had a satisfying dinner.
