Pickled Beets
a recipe poem (Paulette and I wrote many of them. We wanted a book)
Gorgeous beets
at the farmer’s market:
yellow orange red.
Beet greens beautiful too.
I bought them to pickle.
Never pickled beets before
but I knew it was easy
and the Greek supermarket
was selling pickled beets
with fava beans which seemed
perfect so I roasted the beets
for an hour or so then cleaned
and sliced them. Meanwhile
boiling a cup of balsamic vinegar
with a cup of water and some
spices and mustard and
a little bit sugar. Sautéed the greens
and put beets and dressing and greens
together in a bright yellow bowl.
Refrigerated for an hour then
added some fava beans.
