The first thing my cousin, who’d been living there for a while, told me when I moved to L.A. from NYC in the late 70s: Hellmans is Best Foods out here.

Hence the slogan "Bring out the Hellmann's and being out the Best!" I don't know if the dividing line is the Rockies or the Mississippi River.

Aren't you missing the oil? I use olive oil, slightly less than 1 cup per yolk, drizzling in slowly. I did know a mayonnaise queen who could just blend the ingredients. I don't have her mayonnaise gods on my side.
