I insist on saying every chance I get--this obsession with Al Dente has created more undercooked pasta--more stomach aches--than I can say. You cook the pasta until it is cooked but doesn't have that awful undercooked hard to digest center. I hate undercooked Pasta. But I love the New Year.

Hold firm on the noodles.
Al dente pasta is great at other times.
Don't expect an Italian to understand American mac 'n cheese either.
